Measure 250g or 1 large cup of urad dal
wash the dal in water
soak the dal for 5 hours
put 2 green chilis in a blender
add 5 small pieces of ginger
empty the soaked urad dal into the blender
add two teaspoons of salt
blend the ingredients into a thick paste
transfer the ingredients into a clean container
add two diced onions into the paste
next add fresh coriander leaves and mix everything together
wet your hands and take a small amount of the batter in your hand
make a small hole with your thumb in the centre
place the batter into hot oil
add 3 - 4 batters at the same time
fry the batters until the turn brown
flip the batters so that they fry on both sides
you can place the batters onto paper towels to soak up the excess oil
medu vada is typically served hot with coconut chutney and sambar
